Linseeds: The Secret Ingredient in a Fabulous Mousse

Are you looking for a way to make your vegan desserts even more satisfying and healthy? Look no further than linseeds!
Not only do they expand in liquids, making them perfect for thickening sauces and creating a smooth, creamy texture in dishes like mousse, but they're also a powerhouse of nutrition.
In my fabulous mousse recipe, linseeds have been milled or ground to ensure a silky smooth texture and proper setting. But don't stop there! Keep linseeds on hand as a kitchen staple for all kinds of recipes.

Why? Linseeds are loaded with vegan omega-3 fatty acids and fiber. They're excellent for your digestive health and will help keep you feeling full for longer.

Berries

Feel free to just use one type of berry instead of a mixture, just be sure to use the same quantity as the recipe states.

Coconut milk

I highly recommend using coconut milk without added gums like carrageenan gum, which has been linked to cancer. It's important to be aware that using coconut milk with gums can alter the setting properties, and may cause your mousse not to thicken.

It is frustrating to see the many unnecessary additives added to coconut milk sold in supermarkets. This is why I choose to buy my coconut milk online, and always look for 1 ingredient coconut milk. Keep the mousse in the fridge for up to 3 days. You could also make them in jars and take them to work with you.

Step by step

15 mins prep time - 24 hours chilling time

Recipe

  • 1 tin coconut milk

  • 60 g linseeds ( milled)

  • 100g blackberries

  • 50 g cherries ( I used frozen)

  • 50 raspberries ( I used frozen)

  • 50 g raw honey/agave

Method

  1. Place all the ingredients into a Nutri Bullet or similar and blend for a few minutes until really thick and smooth.

  2. Spoon into bowls or glasses, garnish with berries and leave to set in the fridge for 24 hours.

  3. Enjoy eating the mousse for either a breakfast or dessert option.

Variations

I used a mixture of berries that I had in my freezer. However, you could use any berry of your choice or use wild blueberries or just raspberries. To add texture to this recipe, I garnished with pomegranates, and you could sprinkle over some nuts or seeds as an additional nutrient boost.
